saute zucchini in olive oil and set aside. add more oil if needed then add onion, green pepper and garlic. add remaining ingredients but zucchini and cheese. in deep 3 quart casserole dish, place 1/3 zucchini, pour 1/2 bean mixture over, top with 1/3 cheese and repeat layers ending with cheese. cover and bake at 350 for 25 minutes.
