Soak bread in water for 5 minutes. Squeeze dry. In food processor, process ginger, garlic and 1 teaspoon water to a paste. In a bowl, combine onion, mint, cilantro, turmeric, cayenne, coriander, ginger paste and salt. Mix thoroughly. Add beef and soaked bread. Mix well. Divide into 8 portions and form 1/2 inch thick patties. Spread breadcrumbs on a tray. Dredge patties in breadcrumbs then into egg whites. Heat oil in skillet. Add cutlets to pan and cook for 4 minutes per side.
