Spiced Parsnips (Mzoura)

Ingredients

  • 2 lb Parsnip
  • 3 Tbsp Olive Oil
  • 1 Small Onion
  • 1 Cloves Garlic
  • 1 Tbsp Harissa
  • 1 Tsp Cumin
  • 1 Tsp Coriander
  • 1 Tsp Honey
  • 0.66 Cup Vegetable Broth
  • 1 Salt
  • 1 Pepper
  • 1 Bunch Cilantro


Directions

Cook the parsnips in boiling water for 7 minutes. Drain. Heat oil in frying pan and saute onion and garlic until well browned. Stir in Harissa and spices, then add honey, broth, parsnips and seasoning. Cook for 10 minutes. Serve, sprinkled with cilantro.
