Ingredients

  • 0.25 lb Spinach
  • 0.33 Cup Basil
  • 0.25 Cup Pine Nut
  • 0.25 Cup Olive Oil
  • 2 Tbsp Miso
  • 2 Tbsp Parsley
  • 0.5 lb Udon Noodle
  • 1 Tbsp Olive Oil
  • 2 Cloves Garlic
  • 1 Large Chili Pepper
  • 14 oz Tomato
  • 0.5 Cup Olive
  • 1 Pepper


Directions

combine sauce ingredients in food processor and create course puree. cook noodles al dente, drain and toss with pesto and cover. Saute garlic and pepper in olive oil. add tomatoes, olives and black pepper. Simmer 5 minutes. Stir into noodle mixture and serve at once or at room temperature.
