Ingredients

  • 3 lb Calabaza Squash
  • 4 Tbsp Butter
  • 2 Large Onions
  • 2 Tsp Ground Coriander
  • 1 Tsp Cumin
  • 1 Pepper
  • 3 Cup Chicken Stock
  • 1 Large Ripe Plaintain
  • 1 Cup Apple Juice
  • 1 Salt


Directions

Preheat Oven To 400 Degrees. In A Large Mixing Bowl, Mix Together, Flour, Baking Powder, Salt And Sugar. In Small Bowl Mix Egg, Milk, Butter, Garlic And Onion. Make A Well In The Center Of The Dry Ingredients And Pour In The Egg Mixture. Mix Together, The Batter Should Have Small Lumps In It. Pour Batter Into Greased Muffin Pan, Filling Each About 2/3Rds Full. Bake For 20 Minutes.
