saute pine nuts in oil 5 minutes. Add scallions, spinach and garlic, saute 4 minutes, remove from heat. Season fish with salt and pepper, place spinach mixture evenly on fish fillets, fold over ends to enclose. set aside. Melt butter, add paprika, red pepper, tomatoes, wine, lemon juice, bring to a boil, lower fish into sauce, sprinkle with dill, cover and simmer for 8 minutes. sprinkle with parsley and serve with rice.
