Parsi Sabzi (Vegetable Medley)

Ingredients

  • 1 Tbsp Olive Oil
  • 0.5 lb Potato
  • 0.5 lb Sweet Potato
  • 2 Medium Carrot
  • 1 Medium Onion
  • 3 Tbsp Cilantro
  • 2 Medium Green Chile
  • 0.5 Cup Wine Vinegar
  • 1 Tsp Sugar
  • 1 Tsp Salt
  • 1 Cup Frozen Pea
  • 8 Medium Cherry Tomato


Directions

Heat oil in non-reactive pan at moderate heat, add potatoes, carrots and onion. Stir fry for 4 minutes. Add cilantro and chiles. Add vinegar, sugar and salt. Cover and simmer until vegetables are tender. Add peas and cherry tomatoes. Cook for 3 minutes until cooked. Serve hot with naan.
