Ingredients

  • 1.5 Cup Corn Kernel
  • 1 Pinto Beans
  • 4 Medium Scallion
  • 1 Medium Jalapeno
  • 2 Tbsp Cilantro
  • 0.5 Tsp Cumin
  • 0.5 Tsp Salt
  • 8 Tortilla
  • 1 Tsp Spray
  • 0.25 lb Lowfat Swiss Cheese


Directions

preheat oven to 400 degrees. In bowl, combine corn, beans, scallions, jalapeno, cilantro and seasonings. arrange 4 tortillas on 2 lightly sprayed baking pans. spread equal amounts of mixture on top of tortilla. layer cheese over filling and top with tortilla. bake 7-10 minutes until tortillas are lightly browned. serve with salsa.
