  • 1 lb Black Beans
  • 1 Whole Bay Leaf
  • 0.66 Cup Green Sofrito Sauce


Directions

Place Flour, Salt, Paprika And Ginger In Large Bag And Shake Together. Add Pork Cubes And Shake. Remove Pork From Bag. In Frying Pan, Heat The Oil Over Medium High Heat. Brown The Pork For 10 Minutes Until Brown On All Sides. Reduce Heat To Low And Simmer For 20 Minutes. Meanwhile In A Saucepan Over Medium Heat, Whisk Together Pineapple Juice, Butter, Brown Sugar, Soy Sauce, Vinegar, Grenadine And Chicken Stock Mixture. Whisk Until Mixture Thickens. Add Papaya And Roasted Pepper And Stir Until Heated Through. Place Pork On A Bed Or Rice And Pour Sauce Over.
