Bring water to a boil add pork and cook for 30 minutes. Remove pork, reserve 3 cups cooking liquid. Heat oil in skillet, add shallots, garlic, ginger, galangal, pepper, lemon juice and salt. Cook for 3 minutes. Add pork, kecap manis, soy sauce and reserved liquid. Cook, covered, for 30 minutes. Serve over rice.
