Chorizo Stuffed Beef Roast (Argentina)

Ingredients

  • 3 lb Rump Roast
  • 0.5 lb Chorizo
  • 2 Tbsp Olive Oil
  • 1 Medium Onion
  • 3 Cloves Garlic
  • 1 Large Pepper
  • 1 Tsp Oregano
  • 1 Tsp Salt
  • 0.25 Tsp Pepper
  • 2 Large Bay Leaf
  • 8 oz Tomato Sauce


Directions

Cut a narrow 1" X shape all the way thru the beef roast. fill the X-cuts with the sausage. Heat oil in dutch oven until hot, cook beef over medium heat until brown on all sides (15 minutes). Drain fat. Add remaining ingredients, heat to boiling. Reduce heat, cover and simmer until beef is tender (2-2 1/2 hours) Remove bay leaves, skim fat from sauce and serve roast and sauce.
