Heat oil in pan, fry onions, garlic and ginger for 5 minutes. Add red pepper and turmeric. Fry 1 minute. Add 1 tablespoon of water. Fry rapidly for 1 minute and add chicken. Brown chicken well for 5 minutes. Add 1/4 cup of water, cloves, cinnamon, pepper, salt and cardamom. Stir well. Add mushrooms and tomato. Fry for 1 minute then add the rest of the water. Cover the pan and cook for 30 minutes to reduce liquid and produce a thick sauce. Serve with rice.
