Heat oil in dutch oven over medium heat, add noodles and brown. Lift noddle from oil and drain on paper towels. Discard oil in pan. Add onion, tomato, and garlic. Cook for 3 minutes. Add chicken stock and bring to a boil. Season with salt and pepper. Reduce heat to low and simmer 5 minutes. Add noodles and cilantro and simmer until noodles are just done about 6 minutes. Serve with cheese sprinkled over the top.
