Place Calabaza Cubes In Large Saucepan With Enough Water To Cover. Bring To A Boil, Cover And Reduce Heat To Low And Simmer For 20 Minutes. Drain And Mash. Measure, 1 1/2 Cups Of Mashed Calabaza Into A Large Bowl. Add Butter, Egg, Sugar And Mix Until Butter Is Melted. Add The Nutmeg And Stir, Then Add The Flour 1/2 Cup At A Time. Heat The Oil In A Deep Fryer To 375 Degrees. Drop The Dough 1 Tablespoon At A Time Into The Hot Oil. Fry Fritters A Few At A Time Until Lighltly Browned. Remove And Place On Paper Towels To Drain. Sprinkle Lightly With Salt And Serve Warm.
