Coat chicken with salt pepper an dflour. Fry chicken in oil and butter until godlen, about 3 mins per side. Remove to baking dish, cover with foil. Boil shirmp until done. Brown onions in leftover oil. Add wine, boil until reduced by half. Add stock and cream, bring to simmer. Add tarragon, simmer 2 minutes. THen pour over chicken. Bake at 350* 10 minutes. Remove, place 2 shrimp on each chicken breast, return to oven for 2 minutes.
