  • 4.25 lb Black Beans
  • 1.25 lb Beef
  • 1 lb Pork
  • 1 lb Bacon
  • 1 lb Sausage
  • 6 Piece Sausage
  • 1 Piece Beef Tongue
  • 2 Medium Pigs Ears
  • 2 Medium Pigs Tail
  • 2 Medium Pigs Trotters
  • 1 Large Onion
  • 1 Tbsp Olive Oil
  • 6 Cloves Garlic
  • 3 Medium Bay Leaves
  • 1 Medium Oranges
  • 1 Hot Peppers


Directions

In The Olive Oil Brown The Beef With The Onion And Garlic. Add All The Remaining Ingredients, Except The Corn, Sherry And Pumpkin Of Course. Simmer For A 1 Hour, Covered. Cut The Top Off The Pumpkin And Discard. Scoop Out The Seeds And Stringy Membrane, And Discard Them As Well. You Could Toast The Pumpkin Seeds In The Oven For A Snack If You Like, But They Are Not Used In This Recipe.
