Chickpea And Tagliatelle Soup

Ingredients

  • 2 Medium Onion
  • 3 Cloves Garlic
  • 1 Small Carrot
  • 1 Tbsp Parsley
  • 2 Tbsp Olive Oil
  • 1 Salt
  • 1 Pepper
  • 1 Chickpea
  • 4 Cup Vegetable Broth
  • 6 oz Tagliatelle Pasta


Directions

Saute onion, garlic, carrot, and parsley in olive oil until onions are softened and browning. Season with salt and pepper. Add chickpeas and cook for a few minutes. Add broth and bring to a boil. Simmer for 10 minutes. Taste for seasoning. Cook pasta as directed. Add to soup and serve.
