Genoese Vegetable Soup

Ingredients

  • 2 Tbsp Olive Oil
  • 2 Large Onion
  • 2 Large Carrot
  • 16 oz String Bean
  • 6 Cup Vegetable Broth
  • 0.5 Tsp Salt
  • 1 Tsp Pepper
  • 3 Cloves Garlic
  • 1 Cup Orzo
  • 0.25 Cup Basil
  • 0.25 Cup Parsley
  • 1 Tbsp Parmesan Cheese


Directions

saute onions til translucent. add carrots and beans. saute for 10 more minutes. Add broth and simmer 15 minutes. Add salt, pepper and garlic and simmer 2 minutes. Add orzo and cook until just tender. add basil and parsley simmer 1 more minute. Serve and garnish with cheese.
