Heat the oil and fry the onion and garlic until golden. Add pork and stir-fry until cooked through. Make a hole in the center of the pork, add eggs, salt and pepper. Scramble together. Toss in rice and stir well. Sprinkle with fish sauce and siracha sauce. Add green pepper, tomato, green onions and shrimp. Cook until all is heated through. Transfer to large platter and garnish with green onions and cilantro. Squeeze lime juice over and serve.
