Steam apples over water until tender. Puree apples and pour into a large bowl. Stir in lemon juice, sugar, almond extract and cinnamon. Beat egg whites until stiff but not dry. Stir into apple mixture. Beat at high for 5 minutes or 10 minutes by hand. Preheat oven to 150 degrees. Line a baking sheet with foil. Grease and lightly dust with flour. Drop apple foam by the tablespoons onto the foil. Bake for 6 hours until confections are dry to the touch. Transfer to wire rack to cool. Keep in tightly closed container.
