In large pan heat oil, saute garlic and chles until soft. Add pork, cook 8 minutes. Stir in shrimp, scallions, bamboo shoots, carrots and mushrooms, fry 5 minutes. In small bowl, combine: fish sauce, vinegar, salt, pepper and sugar, stir well. In another bowl, soak vermicelli 10 minutes in hot water. Drain. Add vermicelli and fish sauce mixture to stir fry, mix well, saute 2 minutes.
