Ingredients

  • 4 Large Poblano Pepper
  • 4 Medium Potato
  • 0.5 Cup Sour Cream
  • 1 Whole Chive
  • 0.5 Cup Pepper Jack Cheese
  • 1 Whole Paprika


Directions

Combine all ingredients in large bowl except peppers. Carefully stuff each poblano with the potato mixture then lay on cookie sheet that has been sprayed with non-stick spray and bake 30 minutes at 350*.
