Ingredients

  • 1 lb chicken breasts
  • 0.25 Cup Butter Or Margarine
  • 1.5 Cup Rice
  • 5 Medium Carrots
  • 1 Medium Onion
  • 0.5 Cup Mushrooms
  • 0.25 Cup Sweet Red Pepper
  • 4 Cup Chicken Broth
  • 2 Tbsp Parsley


Directions

In A Large Skillet, Brown Chicken In Butter. Remove And Keep Warm. Add The Rice, Carrots, Onion, Mushrooms And Red Pepper To The Skillet. Cook And Stir Until Rice Is Browned And Onion Is Tender. Stir In Broth. Place Chicken Over Rice Mixture. Bring To A Boil. Reduce Heat; Cover And Simmer For 20-25 Minutes Or Until Rice Is Tender. Stir In Parsley. Let Stand For 5 Minutes Before Serving.
