  • 1 Medium Onion
  • 2 Medium Carrot
  • 2 Celery
  • 2 Tbsp Olive Oil
  • 2 Tbsp Parsley
  • 2 lb Brussel Sprout
  • 5 Cloves Garlic
  • 1 Tbsp Paprika
  • 3 Tsp Guajillo Chilly
  • 1 Tsp Cumin
  • 3 Tbsp Tomato Paste
  • 2 Cup Wine
  • 0.5 Cup Butter Beans
  • 0.5 Cup Pinto Beans
  • 6 Cup Vegetable Stock
  • 0.5 Tsp Thyme
  • 1 Salt
  • 1 Pepper
  • 4 Tbsp Chervil
  • 1 Whole Lime Wedge


Directions

In large saucepan saute onions, carrots and celery in olive oil, about 5 minutes. Add parsley, brussel sprouts & garlic, 2 minutes, add paprika and ground chiles, 2 minutes, add tomato paste, beans, wine and stock, boil, reduce heat simmer covered 15 minutes. Season with remaining ingredients.
