Crumble feta and add to scallions and paprika. Mix well and set aside. In large bowl, whisk eggs with milk, salt and pepper. Melt butter in an omelet pan over medium heat. Add half the egg mixture and allow to set on the bottom. Flip and cook on other side for one minute. Place half the feta mixture on top of the omelet and allow to cook for 1 more minute. Remove and fold in half. Repeat with other omelet. Serve, garnished with dill.
