Ingredients

  • 2 Tbsp Olive Oil
  • 1 Small Onion
  • 1 Tsp Ginger
  • 1 Cloves Garlic
  • 0.5 Tsp Red Pepper
  • 0.25 Tsp Turmeric
  • 0.5 Tsp Salt
  • 1 Tsp Sugar
  • 1 lb Butternut Squash
  • 1 Tbsp Tamarind Paste
  • 0.75 Cup Water


Directions

Heat oil in pan and fry onion for 2 minutes. Add ginger, garlic, red pepper, tumeric, salt and sugar. Fry 1 minute. Add squash and fry for 1 minute. Add water, cover and cook until squash is tender about 15 minutes. Add tamarind liquid and fry until liquid has evaporated. Serve with rice.
