Wash and clean the tindora / kovaykka. Cut them into thin slices lengthwise. Then add sambar powder, turmeric powder, pepper powder, salt, lemon juice and mix it well. Sprinkle 1tsp of water. Add rice flour and mix well. Keep aside for 5 minutes. Then heat oil in a deep bottomed pan. Add tindora / kovaykka. Fry it in a medium heat until it become golden brown. Tindora fry is ready. Serve hot with rice.
