Melt The Butter In A Large Pot, Add Cabbage, Potato And Scallions. Cook And Stir For 4 Minutes. Add The Stock And Simmer, Covered For About 30 Minutes. Do Not Overcook And Allow The Cabbage To Become Soggy. Season To Taste With Nutmeg, Allspice, Salt And Pepper. Stir In Cheese Just Before Serving. Dust Each Serving With Paprika And Serve.
